Sided Trimming

A cover that looks good, without cutting?

I want to plant a privacy hedge on both sides of my property, but I want one that looks nice, without trimming. I would like a non-flowering too if I did not walk on the properties of my neighbors to do the cleaning wilted flowers. I saw a picture of hemlock and it's very nice uncut. Other suggestions? Forgot to add that I'm in Zone 7 and the hedge will have full sun. For me, cleaning up dead flowers that come from my cover blown is not just the neighborly thing to do. I do not see a mess, dead flowers on the ground, so I guess my neighbors will not either.
